It seems obvious, the tastier the food, the higher the intake of food. Accordingly, could the use of flavor enhancers to increase total food intake and lead to an increase in body weight. Animal studies and clinical studies indicate that regular use of glutamate in food to the increasing incidence of obesity could be involved.

A recent study (Shi et al. 2010), fed into the data of 1282 men and women over an observation period of 5 years, comes to an opposite conclusion: So no link exists between the use of glutamate and the development of obesity. Regular use of the taste enhancer glutamate resulted in people not under investigation to a body weight gain.
